Sunday Treats | Lime and Mascarpone Cheesecake
Have you ever had to produce a pudding and been completely stuck for what to make? Well, this delicious lime cheesecake is both summery and super easy to create. I love making it for my family after a Sunday roast, or as a treat for friends during a dinner party.
It's a recipe I learnt while working at The Orchard's Cookery School, (if you're around 18 and want to learn to cook, GO! You can thank me later!) The Orchards have created some of the most fool proof recipes ever, and even my walking-talking-encyclopedic-cookery-book-mum is a MASSIVE fan. Anyway, this cheesecake is awesome, it won't fail you!
For the recipe you will need :
- 340g hobnobs, digestives or gingernuts biscuits
- 100g unsalted butter (softened)
- 500g mascapone
- 85g icing sugar
- 3 limes (finely grated zest and juice)
Combine the biscuits and butter in a food processor, and blend up to make your base (the more granulated you make it the better it will combine but will also be quite dense – I normally aim for roughly pea-sized bits of biscuit left)
Grease the base and sides of a 25cm (10 inch) round tin and press the biscuit mixture into the base.
Using a wooden spoon, beat together the mascarpone, sieved icing sugar, zest and juice of the limes until smooth.
Spoon onto the biscuit base, smooth over and refrigerate. Simple!
I decorated my cheesecake with left over limes, but it will also look great with grated dark chocolate, or a mix of white and dark chocolate!
