Happy Monday! Here we go, another week, another giant to-do list! I recently created this nut free granola recipe as an experiment, and as some of you will know I actually have a nut allergy making granola a bit of 'mare as it's one of those things that ALWAYS has nuts in, so I just can't take the risk. My only option was homemade...
It was surprisingly simple and quick to make and I've been having it for breakfast ever since!
- 2 Cups of Oats
- 2 Cups of Seeds
- 1/2 Cup Oil (I used orange rapeseed oil)
- 1/2 Cup Maple Syrup
- 1 tsp salt
- 1 & 1/2 cups of dried fruit
Preheat the oven to 180 degrees (with fan, 200 degrees without)
Combine the oats, seeds, oil, salt and maple syrup in a bowl and then tip onto a baking tray. You might want to line the tray to stop everything from sticking. Put into the oven for 10mins, after which stir the mixture to stop it from sticking together. Put back in for another 10 mins, again stir.
Pour the mixture over the dried fruit and stir together before putting back in the oven for 5-10 mins (watch the oats, when they are golden it's done!)
Take out and leave to cool.
During the summer our local market is full of trays of peaches, apricots, cherries etc, so we end up freezing lots into compote. This week was apricot week, and trust me, apricots go perfectly with granola!
