Easter Bunnies

A jolly mix of family and sunshine, Easter is here and there are few things my family love less than eating. This year I decided to treat them to some chocolate easter bunny biscuits. Simple to make and fun to enjoy together with a large cup of tea and good amounts of chatting!

For this biscuit recipe you will need : (20 biscuits)

  • 110g unsalted butter
  • 55g caster sugar
  • 170g self raising flour 
  • 1 tsp coco powder

Preheat the oven to 180°C 

Mix all the ingredients together, I cheat and use a magimix, and gather them into a ball. 

Roll the mixture out on a floured surface and use a cookie cutter to create the shape you want. I used a rabbit cookie cutter since it's Easter, but this would work with all sorts of shapes and flavoured biscuits! 

Bake in the oven for 7-10 minutes. 

Remove from the oven before leave to cool before icing.

For the icing 

  • Icing Sugar 
  • Food colouring gel 
  • small amount of water 

Mix together the icing sugar with water until you have a good consistency, you don't want it too thick or it won't hold it's shape! Add the colouring and pipe onto the biscuits.
